Mornings can be a hectic time; whether you’re off to class, battling morning traffic to get to work, or hurrying the kids out of the door, everyone has a morning routine and we often find ourselves pressed for time. They say that breakfast is the most important meal of the day, but we neglect this morning ritual when we hit the snooze button one extra time. A quick fix for your morning routine is to prepare breakfast in advance. How? It’s easy, all you have to do is whip up a pan of delicious Pecan Pie Muffins on Sunday afternoon and you will have breakfast or a sweet treat for the rest of the week!

INGREDIENTS

1 cup packed light brown
1/2 cup all-purpose flour
2 cup chopped pecans
2/3 cup butter softened
2 eggs beaten

DIRECTIONS

Preheat oven to 350 degrees. Grease mini or regular muffin cups generously. Grease them well or they will stick!! In a bowl stir together brown sugar, flour, and pecans, set aside. In the bowl of an electric mixer with a paddle attachment, cream butter for 2 minutes & add eggs until combined. Stir in dry ingredients till just combined. Spoon batter into prepared muffin cups, about 2/3 full. Bake for 12-13 minutes for mini muffins or 15-18 minutes for regular size muffins. Let cool slightly, run a knife around edge of each muffin to pop out.
